传统的Burrata和新鲜马苏里拉一样是用水牛牛乳来制作的,但是现如今也有用牛奶来制作了。新鲜的马苏里拉芝士是由鲜奶开始制作,经过凝乳、去除乳清、热水浸泡、拉伸等生产工艺制作而成。布拉塔干酪是用新鲜马苏里拉奶酪和奶油混合制作而成,用马苏里拉奶酪做皮,填以豆乳状的凝乳碎块和鲜奶油,收口捆绑完成。
这可是100%的意大利传统做法。百年前,大厨打造出的可爱的外形和清爽的口感,她的风味质地可是相当独特的,被称之为“会爆浆的马苏里拉奶酪”,也被誉为“水牛奶酪中的女皇”。虽然和马苏里拉一样是一种软质的奶酪,但是其质地更饱满细腻、口味更清爽柔滑、奶味也更浓郁。
新鲜的布拉塔奶酪是常温保存的,但是保质期仅仅24-48小时,冷藏会适当延长到几天。对于我们中国人来说,这种产自意大利的奶酪,显然这样的保质期无法品尝到,好在有现代冷冻技术将其冷冻之后运往中国,吃之前解冻即可,好吃到飞起,强烈推荐。

Traditionally Burrata and Mozzarella are made by Buffalo milk, and now more for cow milk. Fresh Mozzarella are made by fresh milk, by process like curd, remove whey water, hot water, stretching. Burrata is made by Mozzarella, which surface is Mozzarella, the filled with curd and fresh cream.

使用方式:
放在冷藏24小时至自然解冻完全最佳,也可以置于室温解冻但是效果会差,不要用热水浸泡或者烤箱加速解冻,产品会很差不适合食用。
最简单也是最好吃的方法就是整个的、新鲜的端上餐桌,吃之前自己切开,让内馅慢慢流淌出来,只需稍加海盐和黑胡椒,就可以享受顺滑、鲜美、纯正的奶香。
布拉塔和各种水果提子,蓝莓,草莓,奇异果,桃子等都是完美组合。
喜欢的话,略略淋上点优质的橄榄油、新鲜的香草,也是非常好的搭配。
